The Piggy Squire is a gourmet experience created out of pure passion. Our head chef and founder, Matt Squire, has had a passion for food since he was a small boy, tending his own vegetable patch and helping to bake bread in the family kitchen. As a young man he spent two years honing his skills in a family run establishment on the shores of Lake Garda in Northern Italy, embracing traditional Italian flavours whilst perfecting the art of cooking over coals. That passion finally resulted in Matt giving up a successful career to follow his dream — the creation of The Piggy Squire.
In truth, the search for the ultimate butcher did not take long. As a boy Matt was taken to Peter Goss, the highly esteemed and multi award winning butcher, to buy steaks as a treat when most boys would seek toy soldiers. Peter Goss has been providing the Bicester community and many high profile clients with locally sourced meat to his own exacting standards since the 1960s and so as far as The Piggy Squire's requirement for quality was concerned there was no other choice.
A pig roast or lamb roast from The Piggy Squire provides more than just a meal — it is a memorable experience which stimulates all the senses. We strive for excellence on every occasion and our reputation rests on our belief that we are only as good as our last event. Our enthusiasm and flexibility have become renowned amongst customers and contacts alike.
